What to do with jumbo sea scallops?

I was at The Meat Market yesterday and decided to buy some scallops for the first time EVER.  Since then, I’ve been thinking about what to do with them.  I looked online for a bit and then I asked my friends on Facebook.

Thankfully, Kelly responded with her fool-proof recipe for Grilled Scallops with Red Pepper Sauce.

Here’s how it went down.

I assembled the ingredients – all five of them:

Blended the wine, chicken broth, and red peppers:

Put the blended mixture into a frying pan and added the basil:

Then, I turned around to see that I had an audience!

Here they are… 1/2 pound of seafood goodness:

I even brought out the fancy spatula for this occasion:

…and here is what Jim had for dinner:

I happened to have some marinated teriyaki steak that I took out for my non-seafood loving husband.  I cooked it up, put it over salad, and sprinkled on some balsamic dressing.  I wanted him to taste the red pepper sauce, so I boiled some cheese tortellini and put the sauce over top.

Both were a hit!

Now I’m in trouble!

Apparently, Charlotte had enough of my shenanigans this week…

What’s not so good for me is that all of the stuff she said was true…

I forgot my regular glasses at home so I had to wear my sunglasses to see my computer
I was listening to my iPod since I was working on the computer for most of the day
I did use some nail polish to fix a part that chipped on one of my toe nails

Doesn’t look so good for me, does it?

When the boss is away…

600 ft. of Aluminum foil, and there you have it!

Happy Birthday, Leslie!

War Scars

I was inspired by watching Julio Figueroa play percussion instruments last week at PDWC 08. I couldn’t wait to get home and try some of the things I saw.

On Sunday I played both the tambourine and shaker at the same time. I knew after the first time I hit the tambourine to my forearm there would be trouble…

Here’s what my arm looked like on Monday:

I don’t think this is what Julio meant when he said “know your weapons of worship”!

it’s a big world out there… or is it?

Just got back for the Saddleback Worship Conference last night (well, really this morning). One word to describe it – PHENOMENAL! Two words – LIFE CHANGING! At the conference, I took two classes on Social Media and how to use what’s out there to communicate with others. As Carlos Whittaker said in his session – blogging is a way to cheat time in relationships. Sounds kind of negative at first, but think about it. You don’t have to have a formal meeting or gathering to get to know about other people.

This is a test. Let’s see how big (or small) of a world we have.
